1 kg mixed fruit (soaked in half cup brandy)
1 kg Granny Smith Apple (peeled & grated)
1 tbsp Golden Syrup
1 cup brown sugar
250 grams melted butter
4 large eggs lightly beaten
1.5 cups plain flour
1 tsp mixed spice
1/2 tsp cinnamon
almonds to decorate
Younger Priddle’s addition – slivered almonds and mixed peel.
Place fruit and brandy in bowl with grated apple, brown sugar and Golden Syrup.
Add beaten egg and coated melted butter and lastly, add flour and spices.
Pour into lined 8” or 9” high tin lined with paper to come 2” above tin.
Cook 180 C/360F, 2.5-3 hrs (watch top and put brown paper on if necessary).
White still warm drizzle some extra brandy over the top of cake.
Cover cake with foil and leave in tin too cool.
